You can also do this:
Query for the appropriate records
<cfset RandomRecord = RandRange(1, #QueryName.RecordCount#)>
<cfoutput>
#QueryName.FieldName[RandomRecord]#
</cfoutput>
This will output the field for the row with the row number of RandomRecord.
