I would suggest using Flash MX and ColdFusion MX together and build a rich client environment. The trick is to get POS input devices to send data to the client's browser...it should be like a regular keyboard however. But running over an intranet/extranet this application should be very fast. Plus you could build a POS screen that when it idles it shows pretty advertisements.
