I've used openwebmail on top of a couple Cobalt RAQ servers (procmail underneath). OpenWebmail was pretty great, though a bit of a resource hog if you're talking 100s of users simultaneously.
And as an aside, the Cobalt is great at POP/IMAP out of the box with a great GUI -- but since Sun bought Cobalt, support sucks and updates (e.g. majory security upgrades like MySQL 3.23.54 and the Apache chunking vulnerability) take weeks. Plenty of other good suggestions out there for the web server, I'm sure, but openwebmail was a lot of fun to add to the existing mail infrastructure and was quick and easy.
