Considering that an XML Schema is written in XML I'd say it's definitely possible, as a matter of fact, it's what the XML authority really hoped would happen once XML Schema became the standard as opposed to the older DTD's. I'm not aware of any CF apps that do it currently -- I suspect it'd be a fairly large project considering the complexities of XML Schema, but all the documentation you need is right there on the W3C site.
