I use linked Access tables without a problem, but there's a caveat.
I've found that the absolute path where the *.mdb files are stored on
the production server need to be mirrored on your local development
machine. If they don't match, it won't work properly. So, if the path
on your production server is something like c:\web\data\yourfile.mdb and
you're using something like d:\web\somedir\yourfile.mdb, I don't think
you'll have any success. You'll need to set up the same directory and
drive as on your production server.
