I don't have the script with me but what I have done in the past is write a simple template using CFFILE that grabs all the files from the Underliverable folder and dumps them into the Spool folder for another attempt at sending them.
If you just want to clean out the old messages, setup a scheduled task that will delete the files on a weekly basis (daily, monthly, whatever). I do this for mail and old server error logs.
