StructDelete on the Form scope works just fine, as does setting form values:

<cfset form.foo = "hello">
<cfdump var="#form#">
<cfset StructDelete(form, "foo")>
<cfdump var="#form#">

I don't believe you can use StructDelete() on scopes. I would rewrite
the code as follows.

<cfloop list="#variables.my_table_fields#" index="x">
<cfif StructKeyExists(form, x)>
<cfset form[x] = qSelProgTable[x]>
</cfif>
</cfloop>

Although, you may not be able to set values in the form scope either as
some scopes have become read-only.
