This isn't exactly a map like you're thinking, but might help none the less.

In a nutshell you include the file in your Application.cfm, then you click
through the site. Every time you hit a page, it'll save the html contents to
a file. What you end up with is an html-only version of the site. Without
the underlying cfml/sql code, you can focus on what the application needs to
do instead of trying to decipher what the previous developers were thinking.

  Looking into taking over a huge web site project that a potential client

  mis-managed, there are TONS of files on the server that I have no idea

  there that can spider a CF/HTML site and map out the basic structure,
