They remain open as long as ColdFusion has a cached connection to them, you
can get rid of them by Clicking "Refresh" in the Coldfusion administrator
under Verify Datasources.
You can also flush the cache pragmatically, with one of the "hidden cold
fusion functions"

Hey, I know this is slightly off-topic, but does anyone know how long
.ldb files generally hang around (provided you don't have the database
open in Access)? There never seems to be a rhyme or reason...
