Just don't nest one web root directory within another, and put them all on a
separate partition from your operating system and other applications.

Yes, you can have as many virtual IIS servers using the CF server as you
like. Again, the directory location really doesn't matter too much. I like
to have all my virtual servers in parallel directories:
Inetpub\www.foo.com
Inetpub\www.bar.com
