UTF-8 or Unicode?
If you store UTF-8 in the database, there should not be any problem with CF 5, since UTF-8 is supported by plain vanilla ASCII.
Just add the correct character set in your meta tags.
If it is Unicode, then it is another story, Unicode are 2 byte words, and cannot be handled properly by CF 5.
