Why? Because there's no gui yet? I'm setting up a new server this weekend and am planning on plugging in and playing with MSDE, which apparently has a GUI now and does not have the single-processor limit. I have MSDE running elsewhere but as something plugged in by a 3rd-party app (LiveStats). Never tried to use it in production.
