My personal choice for Win.. is the IPSwitch IMail.. very easy to use.. setup.. etc.. and has pretty much all the features..
For *NIX.. my personal choice is PostFix with Courier IMAP (you can go UW IMAP also) Infact we switched from iMail to postfix.. in 99.. For spam Spamassassin or Barracuda Spam Firewall..
