I don't have the links handy so I'd have to go search for them anyway.
Spike Milligan (of CFEclipse fame) wrote one I believe and Phil Cruz
also has a CFC documentation generation.

Well, none of the UML tools support CFC generation or reverse
engineering yet. I use Together. I've also tried Poseidon / ArgoUML
and I occasionally use the UML template in Omnigraffle (which is sort
of the Mac equivalent of Visio - except it's free and it generates
standard file formats a lot more cleanly!).

And, yes, most of these tools are overkill for what you're doing right now.
