Did you set the admin to log long-running templates? That's a good first step. 

If you do what Barney suggests, grab the debug info also and log the detailed 
execution time for all templates. It is a lot of data to log for each request, 
so you don't want to do it for long, but it will show you exactly where you are 
having issues.
