I did that a few times. One problem is keeping the databases in sync.. if you run them both overlapping, some data will be entered into both servers- how do you reconcile that? What I did is set the TTL value in the dns of the old web server to a low value, so when the change is made, the dns info isn't cached as long. Then when it is time to change, the new one has the live sites and on the old one put up a page that says the website temporarily moved, and redirect them to the new ip address. Then make the change in dns at a slow time, like midnight Saturday night and everything will be working by Sunday morning.
I would also take the opportunity to upgrade, if you have the time.. this way you save downtime later.. and it is much, much better to start out with a fresh install of the operating system and cold fusion than to upgrade from previous versions.
