I have run CFMX 6.1 on W2k3 standard and web editions for about 18 months. For CFMX 7 I have run it for a reasonable period on W2k3 web server edition and I have had no problems.
Everyone of the servers I have helped get things running on W2k3 in the past that other people own has been down to spurious Windows services that are not required and are for whatever reason clashing with the JVM. There are many MS best practice docs regarding securing and trimming out the services that you don't need when you are running a web-server. I suggest that you use those docs and turn off everything you don't need and even some of the stuff that you do but isn't necessary for CFMX. Then turn on the services one by one that you do need and see how that affects your stability.
