Hi Bryan, We have fairly recently adopted CVS (last 6 months) and I (for my sins) was the driving force behind it.
Our setup is that the CVS server and repository (where all the source code is held) is on a LINUX box. We already had linux servers and CVS comes as standard and is easy to set up. However DONT PANIC! because there is a well established version of CVS called cvsnt (see google) that runs on windows. Our developers where using CF Studio/Homesite+ but we have now switched to CFECLIPSE because 1) its must better all round and 2) it integrates with CVS without any further effort (or even additional plugin programs). Having said all of that SubVersion (as mentioned by Marlon) is a good product - when I made the decision to use CVS, Subversion was less mature and there were less tools available, whereas CVS has a long pedegree. Subversion sorts out some of the issues in CVS regarding moving/renaming files which is a bit messy. CVS has worked well for us and no real problems have cropped up. I also know that Macromedia use it as part of their own web site development.
