Look in the Exchange System manager tool. I can't remember the exact interface but you would want to drill down to where you will see the protocols (think it is Site, Servers, protocols) one is for smtp and inside of it one finds the smtp icon which holds the configuratio. You can see if your server is allowed to relay throught the exchange server by taking a properties of it. I use by IP so my cf server and only my cf server may relay.
