There is only one version of the JVM installed on that server: 1.4.2_05-b04

We resolved it by removing the other JVM(s) that were installed before the install of 7, then specifically installing the version CF 7 required (if it wasn't done already). Has worked flawlessly since. I would suggest looking at the JVM issue first.
