If you're using Windows, and you're more comfortable administering IIS, I'd recommend that you use IIS. IIS 6 might perform a little better than Apache, since IIS 6 relies on a low-level system service (HTTP.SYS) for serving static files, but you're not likely to see any meaningful difference, especially if you're using CF to do most of the heavy lifting.
