I guess I had the separator and delimiter attributes mixed-up... Yes, you can use a wildcard to search for things. I'm not sure if that works when deleting attributes.
I'm also not sure about your LDAP server, but you may need to retrieve all values for the particular attribute, remove the unneeded values using list- or replace-related functions, then put all of the values back in the attribute.
