We just went through similar hassles with Other Java imaging packages on headless systems. While this CFC works ok, it's likely that other packages involving text won't if you ever try them (not without breaking CFCHART anyway).
We solved the problem by using a virtual xserver on the machine and removing all of the awt arguments from the JVM command line.
