As far as I can tell, "Web 2.0" covers lots of ground beyond just web GUIs - different types of applications, "social software" and so on. The "AJAX" label is pretty straightforward, I think - any app that uses XmlHttpRequest to exchange data without requiring page refreshes is an AJAX app. Of course, there's nothing really new there; before we had XmlHttpRequest, we used GIF pipes or hidden frames the same way for years and years. But everything's better with a buzzword!
