There is a nice intro to CF here http://www.macromedia.com/go/cfmx7_getstarted with sample apps and a snippet explorer to see how every aspect of the language works. Finally this page http://www.macromedia.com/software/coldfusion/demos/ has demos/tutorials focusing on the new features in CFMX 7.
