I don't really think there is a "default" protocol with Exchange, or any mail server. You choose to connect to Exchange using SMTP/POP/IMAP/MAPI/OWA/CDO/etc.
I think you just need to choose one of those. If you are using CFMAIL, then you inherently use SMTP.
