If you really need to do it yourself, import the raw files direct into
the database.  That'll at least get you to familiar territory (SQL),
but if there's a lot of data, it'll probably be pretty slow.  If you
don't need to do it yourself, there are a fair number of free log
analysis tools.  Webalizer is probably a good one as it's really
simple to set up and use, and it's got your requests-per-hour chart.
