Something has been bugging me for a while now and I finally got around to fixiing it. Normally my CF boxes do not use a "real" mail server. Therefore, to test my <cfmail> generated emails, I dig down to the undelivered folder, wait for the mail, open it, try to read it, and repeat if I made a formatting issue.
Today I wrote a little app called SpoolMail. It integrates with the CF Admin to let you read the mail from the undelivered folder in a hotmail/gmail type interface. You can then clean up (delete) the mail, or move it to the spool if you choose.
