I'm pretty sure this is possible. You tried the cfusionmx7\verity\verity-install.bat file?
Well, for me it was jrun\verity\verity-install.bat (multi-home configuration). But it worked like a charm. Took me all of 15 minutes to create a collection, index all 87 word documents that comprise our employee handbook and create a basic template that will allow searching of this information.
