CF isn't mentioned as a requirement for a very simple reason. CF isn't required. Flex apps can interact with all kinds of external data, including XML files, web services, and flash remoting (which *ALSO* doesn't require coldfusion). So the backend to flex can be xml files, perl, php, asp, ..net, python, java servlets, jsp, C... you name it. if you can generate XML or build SOAP-based web services with a language - you can build a backend to Flex with it.
