Errr no. You don't need the IIS virtual mapping. You needed it becuase you put canvas outside of web root. The normal use of the app is to put it under web root.
Yes - you should be able to run N copies of canvas. Just ensure you change the settings. I believe I remember someone having a small issue with this, so if you have any trouble, just ping me.
