Oh you two don't know what a great feeling it is to find the solution to this! Symantec Antivirus was set to scan network paths -- simple tick of the option and I'm back in business! Thanks so much!

Yup. The most common culprit. You can also try switching the network path (server path instead of using the mapped drive). I'd bet it's antivirus though... there are a few threads in the CFE mailing list regarding this issue as well.
