Well, I had my prayers answered as far as the paragraph issues goes
(currently jumping up and down in my chair). A HUGE thanks to everyone who
posted, and also Mark Warrick (who pretty much pointed me to the answer)
Here's the result, I'll leave this story posted for a while. As you can see
it formats normally.

The actual code I used was this
<CFSET Text1 = "#Replace(Text1, "#CHR(10)#", "<P>", "ALL")#">
Followed by a regular sql statement. (of course you have the other bits and
pieces in there)
Text1 (I didn't know that Text was a reserved word until one late late
night) is the field in the database. But this is great, no more relying on
the user to enter a <P> at each line.
