Could you explain a little please? It would seem to me that using an extra
function or tag would increase processing time.

ALWAYS use CFQUERYPARAM...it's not just for stopping SQL injection
attacks....it also increases query speed by using BIND variables (at least
with Oracle and MS SQL Server.....not Access....not sure about mySQL).
