I would recommend subscribing to the model-glue miling list.

The answer to your question would be to open the index.cfm from your default
template.  In the comments are the brief instructions on how to relocate
your configuration files to places outside of your webroot.  You can
relocate any of the .xml configuration files.

By default, the file path is set as the current directory using the "." in
the ExpandPath().  In sahred hosting and intranets, I usually relocate the
moldeglue.xml and the coldspring.xml.  If you plan to use scaffolding, you
may want to relocate the scaffold.xml as well.
