I think I may have just found the answer to my own question. There are a bunch of .xml files. For instance CFusionMX/lib/neo-cron.xml appears to hold all of the scheduled tasks.
I'm still groping a bit in the darkness, so if anyone has any tried and true experience with configuring a new server from an existing servers xml files. I'd love any advice/help.
