The reason it wouldn't uninstall was because there were 20 instances of WINWORD.EXE running in the background of the machine. I never actually opened it once manually so I'm guessing that CF was creating a new instance everytime I put in a request. Something to note if you try this with Office 2007.
I've uninstalled it now though and 97 worked first time.
