Rick, ffmpeg is a piece of software to record, convert and stream audio & video files. I am going to be using it to convert all uploaded video files into one standard format, Flash Video Files (FLV). You can run it using cfexecute and convert the files on the fly. I came across some sample code in google (searched coldfusion + ffmpeg) which covered its use.
