Well I'm suspecting it's the 'content-type' header.

On the servers that have no problem, it's kicking out '8bit'. On the 
servers with issues, it's kicking out 'quoted-printable'

Since we're still on CF6.1, I can't just do a straight up <cfmailparam" 
with the word "type" in any value (i.e. 'content-type'):

Unfortunately, I can't seem to get the provided workaround to work - and 
others have said it results in standards-breaking emails anyhow.

We're going to be upgrading soon, and since that technote says the issue 
was fixed with MX 7 (and I assume the fix will carry over to CF 8), I 
think I'm just gonna sit on this one 'til then.
