Running Eclipse w/CFEclipse on Vista has been fine for me - no problems. I have Dreamweaver 8, but don't use it.
CF8 as well, no real problems, except with me trying to figure out how to configure IIS7 correctly. The multiple site support in vista pro is a big improvement over XP, but it's taken me far too long to get it to serve things like css and jpg files. yuck.
