I'm not aware of any specific CF to Oracle info but setting up an Oracle
data source in CF is about as easy as setting up an Access one. 

Your biggest challenge will be setting Oracle up. Once the CF Server machine
can connect to Oracle (you can test with SQL Plus) you'll be able to connect
with CF. There's an Oracle Personal Edition that I think is almost free that
you could get to experiment with.

Any suggestions where I can find information on how to use cold fusion with
