The point is to decouple your servers from physical hardware. It would make
absolutely no sense to run a single VM on a single VMware server. But given
that most servers have varied resource requirements and usage patterns,
VMware can let you use more of your physical servers' resources. In
addition, it's very easy to increase available resources to a VM or bring it
online in a new environment. Finally, it's much easier to manage a bunch of
VMs on a handful of really beefy servers, than it is to manage a bunch of
relatively small x86 boxes.
