Since you already are in a Windows world and are using MSSQL, I would probably stick to something close. I would use the express version of MSSQL 2005(verify that is legal to do, pretty certain it is), CF Pro and on Windows with IIS. An out of the box installation of those things probably would present you with no issues at all. I bet any modern server would be fine for you. I have a couple of clients that only have 25-50 users and the machines they are using for their CF, Windows OS, IIS, and database, could not even be classified as servers.
