As a matter of fact, AHPHosting.com does use Plesk.

The good news is, however, that none of my clients
work with their sites at all, except through the
content management systems that I build for them.
And, although I run a mail server, it's just for my
personal email and for newsletter, etc that my clients
send out through their sites.  I don't provide POP email
services for any clients.

So I don't have to worry about clients working directly
with any of the technology or software running their sites.

Thanks for the tip, too, about the single IP approach.
That sounds like what I'll need to do.  I want to be able
to access everything from one point.

I can tell, this is going to be loads of fun...

They still would probably have to set up the database though, I doubt you
would ever have root access on a shared server!

Of course, I agree. 

BTW - I use Navicat as well, and a warning here if you get a VPS with Plesk
on it. I think it's a nice control panel for the most part, particularly if
you are going to be hosting clients on the site and want to give them access
for setting up things like domains and email accounts. But one thing that
really bugs me is that it disables the MySQL root account, instead requiring
you to set up individual databases each with their own user. Kind of a pain
if you like to remotely administer all your databases under one account. You
can fix this, but it requires using the command line interface to add the
root account back in. Best is to grant it access only for your IP address,
for obvious security reasons. Just an FYI if you do go this route that it's
an issue.
