I'm just throwing out a guess, but do you see your desired fonts listed
in CF Admin's Font Management area?

I assumed that CF had to "know" about the fonts before they could be
used in CFDOCUMENT.

I have tried font tags, I have tried css style declarations in the
header, I have tried css style declarations inline.  The font tags don't
work and the css declarations work for everything but the font-family.
If cfdocument only supports a single font in one document, that is a
serious limitation.
