Since UML is a software-independent specification for modeling components, I would be surprised if you found one geared specifically to ColdFusion or Flex. Given that, we use StarUML here (http://staruml.sourceforge.net/en/) because it is easy to use for beginners, but has just enough functionality for advanced users.
