You can very easily use any of the Java-based template engines (e.g. Velocity) with CF, since CF is just Java. Or you could use the Java 6 scripting engine support and run PHP inside your CF (check Sean Corfield's blog) and use Smarty itself, though I don't know what kind of performance implications that would have.
