Let me qualify this upfront: I have very little experience with CF7 on OS X. I do work with CF on Linux fairly often, though.

You should be able to simply delete the directory containing CF7 in most cases. You may have references to CF7 in some initialization scripts; you can edit those appropriately or simply ignore the errors they raise. If you configured Apache to work with CF7, you can edit httpd.conf to remove the CF/Jrun info.
