If you want to programmatically get a list of your datasources, check into 
the functionality the Admin API gives you.
Here's a sample:

If all you want to do is wholesale copy all the datasources from one server 
to another, just copy the appropriate xml files in <cf_root>/lib/  (standard 
install)
CF 7: neo-query.xml
CF 8: neo-query.xml AND neo-datasource.xml
