sure can - spoofing headers is pretty easy with cfhttp.

set header params using cfhttpparam

<cfhttpparam type="header" name="host" value="">

I just did an experiment and when I use that setting the request does not
even show up in the apache logs but I still get the page requested in the
cfhttp.filecontent variable.

By looking up the http 1.1 header specs you can experiment with which header
fields you can set (spoof)

Of course this knowledge is to only be used for educational purposes and I
would never suggest you spoof your headers to steal content.
